Holiday Goddess Cancer Recipe: Garlicky Mussels with Spaghetti
The classic Cancerian seafood is crab. Cancers are often compared to crabs: all hard shell and soft heart, approaching things sideways and indirectly.
Ruled by the moon, Cancerians are influenced by the tides of the sea. As a result they are often thought of as emotional, unstable, moody. One way to their heart is to feed them well. This moon sign is linked with feminine motherly instincts. They appreciate home cooking.
This Italian recipe uses another shellfish: the mussel, although you could also use clams or even a mixture.
Garlicky mussels with spaghetti
Serves 4
With clams or mussels, buy from a reputable fishmonger or shop. As soon as you get them home, keep in the fridge then rinse them in cold water. If the mussels do not close under running water, discard them. If their shells are broken, discard them.
Also, if, when cooking, the shells do not open, discard them. Use a large pan for this so you can cook the pasta and the mussels at the same time.
For the sauce:
- 3 tbsp generous of olive oil
- 3 shallots, finely chopped
- 5 cloves garlic, minced
- 1 kilo of mussels or clams
- glass white wine
For the pasta:
- sea salt
- 400 g spaghetti (not quick cook)
To garnish:
- Handful of sorrel or parsley
Instructions
- In a tall wide pan, heat the olive oil, then add the shallots and fry till golden.
- Add the garlic and the mussels or clams
- Add the white wine
- At the same time, for the pasta, boil water with sea salt in a large pan until boiling.
- Add the spaghetti and cook for 2 minutes less than stated on the packet.
- Once the pasta is cooked, drain it and add it to the pan with the mussels or clam shells. Stir.
- Serve with the herb of your choice: either baby sorrel or parsley.
