Holiday Goddess Taurus Recipe
Of all the signs Taurus and Cancer are probably the most ‘foodie’. Taurus loves to eat, simply for the resultant feeling of comfort, luxury and abundance.
Foods that are Taurean include apples, pears, berries, artichokes, asparagus, cloves, and mixed spices. The earth signs rule root vegetables or anything grown underground, such as carrots, parsnips, beetroot, turnips, ginger, celeriac, garlic and radishes.
When it comes to food, Taurus epitomises the slow food movement. They like to take their time, make things properly from scratch. Like Librans, Taureans are ruled by Venus, which loves sugar. Librans use their Venus to make things look nice, whereas for Taurus, the beauty must be matched with comfort.
Peanuts are a ground nut, a legume, a pulse. Botanically they are a legume but culinarily they are a nut. Here I’ve developed a peanut and potato curry, ideal for Taureans.
Peanut and potato curry
Serves 6
Ingredients
- 100 ml ghee or vegetable oil
- 3 large potatoes, cubed
- 2 tbsp mustard seeds
- 1 tbsp cumin seeds
- 1 tsp coriander powder
- 2 tsps turmeric powder (or 1 inch turmeric root, grated)
- 1 or 2 kashmiri chillies, whole
- 1 tbsp sea salt
- 200 g fresh tomatoes, cut into small chunks or 400 g tin of peeled tomatoes
- 3 tbsps peanut butter
- 100 g whole peanuts, shelled
Instructions
- Heat up the ghee/oil in a deep frying pan or medium saucepan
- Add the mustard seeds and fry for a couple of minutes
- Add the cubed potatoes and fry until soft, stirring frequently
- Add the rest of the spices, salt and whole chillies
- Add the tomatoes, stir for a few minutes then add the peanut butter, stirring well
- Add the whole peanuts
- Serve hot with rice or flatbread and some plain yoghurt
