Holiday Goddess Taurus Recipe: Silky Mac and Cheese

Two signs are ruled by Venus, Libra and Taurus. While both signs are driven by a veneration of beauty, Librans are all about aesthetics while Taureans want sensual beauty. How something feels is important. They like cashmere sweaters, deep sofas, massages, melodic music, relaxing scents, log fires, or as the Scandinavians call it ‘hygge’. They need comfort, cosiness, and calm.

Taureans, as an earth sign, are comforted by food, the security of feeling full. A lack of money and security are a source of fear: there is nothing more fearful for a Taurus than going hungry. This recipe is simple, cheap to make and luxurious, all of these qualities push those Taurus buttons.

Recipe for Silky Mac and Cheese

I also do a spicy version, adding a jar of pickled jalapeños and dusting with smoked paprika.

Serves 4

Ingredients

White sauce:
50g butter
50g plain flour
600ml full cream milk or half single cream/half milk
Salt and white pepper to season
1 tbsp English mustard

For the pasta:
500g small elbow macaroni
1 tbsp salt
500g grated cheddar
50g parmesan, grated
100g mozzarella, cut into chunks

Method:

  1. Butter a baking tin.
  2. Heat the milk in one saucepan.
  1. In another saucepan on a low heat, melt the butter, then add the flour.
  1. Stirring all the time, cook the ‘roux’ until pale golden, then gradually incorporate the hot milk.
  1. Add the cheese just before adding to the pasta, reserving some of the cheddar for the top.
  1. Preheat the oven to 200c.
  1. Cook the pasta in salted boiling water until al dente (a couple of minutes shorter than the stated cooking time on the packet). Drain the pasta.
  1. Empty the cooked pasta into the baking tin. Mix in the cheesy white sauce. Add in any extra flavourings, eg pickled jalapeños or pickled peppercorns.
  1. Sprinkle the reserved cheddar on top. Cover the baking tin with foil.
  1. Bake for 30 minutes, removing the foil for the last 10 minutes to get a browned top.
