This Mercury-ruled sign is blessed with the quicksilver qualities of gemini thinking: witty, nimble, fast. Mercury was the wing-footed Roman god of communication, commerce, messages, eloquence, travelers, and trickery. 

The natives of Gemini are mercurial in nature: this is defined in the dictionary as ‘subject to sudden or unpredictable changes of mood or mind’. But more positively, air-ruled Geminis are flexible and adaptable in their thinking: they are known as a mutable sign, unlike the fixed signs of Aquarius, Taurus, Scorpio and Leo. Anyone with a predominance of third house planets also displays these qualities.

Barfi is a fudgy Indian sweet, served at festivals, often topped with edible silver leaf. This is an easy recipe, and a chance to experiment working with silver. Geminis love learning and have a magpie-like curiosity of anything new and shiny.

Silver Barfi/Burfi
Serves 10

Ingredients

  • 1 tsp neutral vegetable oil for greasing
  • 125 g ghee
  • 250 ml whole milk
  • 500 g full milk powder
  • 100 g icing sugar
  • pinch saffron, ground
  • pinch sea salt
  • 100 g pistachio nibs
  • gold or silver leaf

Instructions

  1. Grease the baking tin
  2. In a medium pan on a low heat, mix the ghee and the milk and simmer until hot. Do not let it boil.
  3. Add the milk powder and the sugar, beating until smooth.
  4. Add the saffron and cook until it reaches 118C.
  5. Pour the mixture into the prepared tin. Press the pistachio nibs into the top of the barfi.
  6. Allow to set for a couple of hours then press the gold or silver leaf on to the top of the barfi.
  7. When completely cool, cut into squares or diamonds. Serve with tea or chai.
